I want to expand my culinary horizons with some new recipes and would like to know what your favourite foods are.

I'm a bit lazy in the kitchen so preferably I prefer meals that take less than half an hour to make and don't need an excessive amount of preparation and fiddling. Smile

Stir fry is quick and tasty. Beef with black bean sauce or chicken with oyster sauce immediately spring to mind. Thai beef salad has quit a few ingedients but is quick, delicious and healthy.

Spaghetti (or other pasta) in cream (single or double), with mushrooms, spinach and smoked salmon or smoked haddock.

Easy, quick, and taste good. Not that healthy, but not that unhealthy either

Pizza - sausage and bacon one from Morrisons, not really much of a cook but like toad in the hole - potatoes, vegetables, yorkshire pudding and sausages.  Can't think of much else.

Jamie Olivers 30 minute meals could be worth a look. Tbh must meals take longer to cook than 30 mins unless they're ready made throw in the oven affairs. If you had an hour... Thinking about it, a slow cooker could be your friend here. Throw the food in it befor you go to work and it's done on your return. Stews, Coq ou vin and those kind of dishes are quick prep time but slow cooking.

I cook from scratch most days. Although not qualified as such, I do love cooking Mediterranean cuisine: Greek, Moroccan, Spanish and Italian.

Most recipes can be knocked up fairly quickly.

Current fav is a Egyptian dish of chicken cooked in lemon, garlic, dried fruit and herbs, served with rice or couscous. Serve it with roasted peppers, mushrooms and dwarf green beans.

When i have roast potatoes & veg i like to have gravy with it & my dad knows this, so i went round to my perants today & my dad cooked salmon, carrots, roast potatoes & broccoli with gravy especialy for me, yum yum.

Heat a tablespoon of oil in a pan. Add cumin seeds & wait until they start popping. Then add prawns & stir fry it for a couple of minutes. Then add curry powder & salt and stir for further 2 mins. It's done! Eat it with naan bread. You can fry a chopped onion after cumin seeds start popping & add prawns when the onion is golden brown.

Rattled of beef with noodles last night, 15 minutes and on the table.

 

Rump beef battered with a rolling pin then thinly sliced. Fried off with pepper, garlic, a little ginger, half a green chilli, splash of dried chilli  with some oyster sauce and pak choi in at the end. The pak choi needs 5 mins with the lid on the wok to steam and to stay crunchy. 

Serve up with some fine noodles, prawn crackers and chilli dip, yum yum Smile

I make a mean curry.

 

Heat some oil in a pan, about 5 tablespoons should do it, add 4 cloves, 4 cardamoms, 2 star anise, a teaspoon of cinnamon and 8 or so curry leaves. let them sizzle for a bit then add half a jar of curry paste (I use Patak's Jalfrezi paste, but they do hotter or milder ones to suit your taste, I'll add a teaspoon or two of chili flakes too if I want a hot one)

Heat it all until most of the oil from the paste has evaporated and the consistency gets a bit stickier.

Finely dice 1 large onion, add it to the pan with 1 teaspoon each of garlic & ginger.

Sweat the water out of the onion - else the end result will taste watery -, add chopped pieces of chicken breast to the curry mixture, stir in well (I have a large appetite, and find 2 breasts per person is normally enough), seal the chicken on each side, lower the heat a tad then stick the lid on.

Give it 10/15 minutes depending on the size of the chicken pieces.

Add about 300ml of passata and half a block (100mg) of creamed coconut (I prefer it to coconut milk), give it a stir then stick the lid on. Cook for another 10 minutes or so making sure all the coconut 'melts' into the sauce.

Add some chopped coriander just before serving.

Serve with a big pile of rice, a naan and an ice cold pint..... Lovely.....Smile
