Pickled onion vinegar and sea salt. Or if I'm really in a daring mood, sweet chilli dipping sauce.

Lots of salt always (if you're going to clog the arteries, may as well harden them up a bit at the same time). Vinegar only if they're with fish. Ketchup usually, sometimes mayonnaise. In Amsterdam, mayonnaise always and nothing else!

If its proper chip shop chips. Salt, vinegar and brown sauce.Theres something about cheap chip shop brown sauce! If its chips made at home I reach for the Reggae Reggae Jerk BBQ.

Salt & vinegar. Obviously no Dutch or Belgians on the list yet as we have no mayonnaise users.

My ex-wife is Dutch and had chips and mayo (or frites saus as it's called) in Amsterdam for the first time (had never even heard of the idea until then) whilst visiting her family... so not what you were all thinking at the mere mention of Amsterdam Wink
