Recording Phone/Email Conversations

I was at a party over weekend and got cornered by someone a little 'off the wall' shall we say. He started telling me about how he records phone conversations and other face to face meetings as he was sure people where lying about him. He also said he had evidence of perjury in court. I don't know if he had taped people in court.
I was always under the impression that recording anything without the person's knowledge was illegal? Or is it just inadmissable as evidence in court?
I told him I thought it was illegal and he kept saying he could record what he liked.
I know there are some legal minded people on here who might know. What would happen to him if it is illegal and he was caught?

Recording stuff generally is not illegal. It would also not be inadmissible (different scenario if covert recording by police). Making a recording in court is illegal. Off the top of my head the maximum is 5 years. No idea what people actually get for doing that sort of thing, doesn't happen very often. Sounds to me like he probably has some paranoia based mental health problems.
